is the sourcing of seasonal
and, where possible, organic
ingredients, it is the refreshing
simplicity of the dishes that is

restaurant adopts an ancient
Spanish technique which
remains a new concept in
Ireland. Thus, customers are
served their meat or fish dishes
on a piping-hot volcanic stove,
to cook to their liking. The
salads, meanwhile, are to die
for, comprising the crunchiest,
freshest leaves and vibrant
fruit and vegetables. Whatever
