Silo is many things to many
people. It’s a restaurant first and
foremost, that much is clear,
but it’s also a bakery, a brewery
and a coffee house. Located in
Brighton’s trendy North Laine,
the catch-all venue works
hand-ing-love with farmers,
growers and coffee roasters
to deliver food and drink that
smacks of freshness. If you’re
sampling lunch or dinner itself,
you’re in safe hands. Head
Chef Douglas McMaster has
created unique dishes that are
both nutritious and delectable.
Favouring a policy that
generates zero waste (there’s
even a recycler-composter
in the reception area) and
relying always on locally and
ethically sourced produce, the
visionary runs a tight ship –
and the proof, as they say, is
in the pudding. The menu is
a simple no-frills affair, with
dishes separated into sections
including Dairy, Fish, Plant and
Meat. Technically, however,
there is no menu; all dishes are
displayed on a projector which
illuminates a whitewashed wall
at the restaurant’s rear. The
coffee shop, incidentally, is in
the corner, while the brewery
is downstairs. With superb
staff, delicious food and an
atmosphere that provides a
lively precursor to a night on
the town, Silo is here to stay.
