House Hotel. The kitchen is
spearheaded by executive
head chef Cornel Uys, who
utilises an abundance of
locally-sourced ingredients to
create inventive contemporary
dishes. Peruse the menu, allow
the sommelier to pair your
meal with an appropriate wine,
and soak up the effervescent
ambiance. The service from the
waiting staff is first-class, with
front of house matching the
work ethic of the craftsmen and
women in the kitchen. Popular
dishes include red mullet and
crab cake, Highland beef and
corn-fed chicken served with
chorizo. Vegetarian options,
meanwhile, include curried
cauliflower with almonds and
goat’s cheese ravioli and saffron
pasta. For a bit of everything,
opt for the seven-course taster
menu: the smoked Highland
fish with tomato and caviar

reviews are anything to go by,
the fickle public and fussy food
critics would appear to be in
agreement for once. Times
and tastes can change, but on
this showing, Contrast looks
