          in addition to its Eat Scotland

          Michael Simpson has been at
        
        
          the helm for three decades, so
        
        
          the kitchen runs like clockwork.
        
        
          Loch Fyne salmon, Scotch
        
        
          beef fillet and sweet Orkney
        
        
          crab are among the offerings,
        
        
          while the turbot – laid carefully
        
        
          on a bed of shellfish risotto,
        
        
          langoustines and scallops – is
        
        
          divine. If seafood isn’t your
        
        
          thing, there is a variety of
        
        
          meat and vegetarian dishes to
        
        
          choose from. The roast breast
        
        
          of wood pigeon, served with
        
        
          blue cheese and poached
        
        
          pear risotto, is a fine option,
        
        
          as is the slow-cooked pork
        
        
          belly with ham hock croquette.
        
        
          Puddings, meanwhile, include
        
        
          baked amaretto peach and
        
        
          thyme brûlée. After your meal,
