Boldly billing itself as the

accused of lacking ambition. It’s
got the clout to justify its claim
too, having been serving ornate
cocktails in the Highland capital
since 2009. Posited on Academy
Street, the stylish bar attracts
the post-work crowd during the
week and the pre-club crowd
on a weekend – Invernessians
looking to unwind and ease into
the party spirit. Bar One serves
a wide range of wines, beers
and spirits, as you’d expect of
such an establishment, but it’s
known and loved best for its
cocktails. Crafted with fresh fruit,
sugar syrup, fragrant herbs and
generous measures of spirits,
they taste every bit as good as
they look. As well as stocking
enough liquor to get the whole
city happy, Bar One does a brisk
trade in Italian coffee and hearty
food. The bread and produce
are sourced locally, while the
meats are roasted in-house.
Pop in for an express sandwich
at lunchtime or wash down your
evening cocktails with a sharing
platter or charcuterie. Finally,
Bar One doesn’t just dispense
cocktails to the masses: it also
passes on the knowledge.
